QUESTION: HOW DOES THIS PAN HANDLE COOKING WITH ABSOLUTELY NO OIL?
Like the others the only thing I have ever cooked w/o oil is a fried egg. I did not think much of it. However, I now have three sizes of this pan, one is about 3 years old, and nothing seems to stick. We cook with gas so our temperature is infinitely adjustable. Based on some other reviews you might not have results as good with electric. I have had no problem with using absolutely no oil. They suggest that it is best not to use spray because that may clog the pores in the pan and to "season" the pan every so often. The Professional line of T-fal is the best I have ever used.
Just great. We never use oil in cooking. We don't even use oil when cooking eggs. Everything cleans up great!
After seasoning the pan with oil as directed in the instructions prior to first time use it has worked fine. I have cooked egg whites without any sticking.

Ok at first, but after the absolute factory finish wears a little, you'll at least want to use a pam-type spray.
America's Test Kitchen did like 70 eggs without oil & loved it. We haven't got to 70 eggs yet, but scrambled eggs with cheese needs no oil at all. Fried eggs are good, but not fabulous without a quick spray of Pam.

After I received this question, I made two scrambled eggs with nothing else in the pan. No sticking. Eggs cooked perfectly. I can't imagine asking for better performance from a teflon pan.

QUESTION: IN WHAT COUNTRY IS THIS ITEM MANUFACTURED?
The accompanying literature said their products are produced in France. I have sent an email to T-fal to ask, because they are based in New Jersey and have European bases, also. The pan is not marked, itself.
While at one time they were made in France, most of their pans are made in China now.
I did not keep the box, or pamphlet, but I would assume it is made in France. The company originates in France and is made from safe metals, and is highly regulated. Awesome Skillet! I would buy one again without a doubt!

I haven't had any problems with it tilting. The base is of heavier construction than the rest of the pan. I am impressed however, with the non stick properties of the pan it is as good now as when I first bought the pan.

Yes. it's very well-balanced, and constructed of a relatively heavier gauge aluminum than typical non-stick pans. It's quickly become my 'go-to' pan whether it's for eggs (including omelets), grilled cheese, vegetables, & even frying meats, esp luncheon meats like pastrami. I have all but eliminated using any oil or butter when using this pan, due to the terrific non-stick coating & even temps across the cooking surface. After almost daily use for several months on our gas range, there's zero signs of any wear on its non-stick surface, and the pans is easily cleaned w/ but a tiny bit of dish-washing liquid & warm water - there's simply no need to ever clean it in a dishwasher.This is an excellent product that does what's it's advertised to d o, and priced fairly (and, in my opinion, very reasonably, too). . .
I use mine on gas burners and it sits flat. The pan has a nice wide flat bottom. Burner grates can sometimes warp slightly after years of use and cause a slight tilt. And stoves can become tilted as well as they settle. So check they are level if all the pans seem to tilt.
it's heavier than many other pans I have and does not tilt over. it's very well built. you can compare weight of your pan at home vs this one.

I have a 12 inch pan. The actual flat part of the cooking surface is 9 inches.
My 12 inch professional T-Fal has a 'flat' surface of 10 inches. I put 'flat' in quotes because on my original review of this product, I was disappointed that the flat part was a bit convex so that juices or oils pour away from the center and settle around the sides. I do like the performance of the surface though, it gets a lot of use and still no scratches evident.

Once the red design fades a bit, and I can feel the heat by holding my hand about 6 inches above all around, I use it..I have no idea what it's suppose to look like. I've have never had a problem or uneven cooking even when I don't pay attention to the red thing or my patience sits on the shelf ! It's a great pan..good luck.
I have found that the spot does not change colors no matter how much heat is applied. However, that does not seem to change the performance in any way.
I have to agree with the others. I don't see much, if any, color change in that red spot. I just pre-heat on medium-high until a little oil in the pan shimmers, and it's good to go. Of all the non-stick skillets I've had over the years, this one feels the most substantial and cleans up easily with a bit of soap on a nylon scrubbie.
I don't even think about the spot. I use it like a frying pan, it works beautifully, but I always use a plastic or wooden implement, and just ipe it out afterwards- no diswasher poison gets near it. A 10" top-tempered glass, with a vent or without is always good to set a hot environment inside before outtint food in to cook.
Just turn up the heat. It can take it.
Yes, High heat will work well only takes a minute or so. Just watch it get ready.

yes it is made in china. I dont like buying products made in china and I didnt check this one before I purchased it but I do like it.
From what I could find on the overstock.com website they are made in the USA. The pan is the BEST for cooking eggs. I just bought the next size up b/c the 8" is good for only 2-3 eggs at a time.

The base has a thick disc of aluminum. After a year with a fairly powerful gas range it is fine.

I have three of these kinds of pans, different sizes...none of them have warped in the least. I LOVE these pans and so does my dear hubby...in fact it was on his recommendation that I purchased the additional two sizes.
Has not warped so far, and is showing NO signs of the coating degrading. We've used it for about a couple of months now and we like it so much that the wife says I need to order another in the smaller size so she can cook small portions just for herself. I'm impressed at how good this pan is compared to the High-priced pans out there. If we can get 3 years out of this pan, it'll be double or triple the life of the non-stick pans we've bought previously. I' Happy!
Trick question! Mine came from the factory warped up in the center and the thermo-spot would not reliably change color. My infrared thermometer indicated uneven heating on the pan in the center vs the sides. It's not the stove, either, as that's a glass top.
I use it very often and it looks as good as the day I took it out of the carton.
We've only had the pan for a couple of months, but it shows no evidence of warping and we treat it much as we do our cast iron skillet.

They're supposed to be durable but I don't believe they were made for ovens... Although you can try it because they seem to be able to handle heat... however make sure you take the necessary precautions for example use a pot holder to protect your hands from the heat, don't leave it in the oven too long. Get more opinions from people who have been cooking for a while with it placed in the oven.

QUESTION: IS IT REALLY DISHWASHER SAFE?
We wash ours in the dishwasher all the time. I am sure if you didn't, they would last longer. I replace mine every couple of years. But I have teenagers and a husband who cook everything on high and use forbidden metal spatulas all the time. I tried much more expensive caphalon "dishwasher safe" skillets and was very disappointed. The T-Fal professional skillets are impressively durable. And for the price, replacing them isn't traumatic. I imagine all my possessions will last longer when my guys leave home.
I've never had to wash mine in the dishwasher. It's cleans beautifully by wiping with soap and water. Little to no effort necessary.

Yes my old one (20)about has been washed in my dishwasher forever and can still be used which I do on occasion but I thought it deserved retirement and bought another which is holding Jo as well

I don't have a dishwasher so I can't speak to that. t cleans so easily you really don't need a dishwasher. A few minute's soak in hot soapy water and a quick swish with a sponge and it's clean!

I read somewhere not to put teflon coated pots or pans in the dishwasher so I have always hand washed them. This is not really a problem as they clean up exceptionally easy. Sorry I couldn't be of more help!

QUESTION: HOW LONG IS THE HANDLE? I HAVE ANOTHER 12 INCH SKILET BUT THE HANDLE IS 10 INCHES LONG. STORAGE AND STORE SPACE ARE TOPUGHT WITH THIS.
The handle is about 7 1/4" long. Honestly, it's really a great length, not too short & not too long, and very comfortable also. I agree that 10" is crazy on the one you have and think you'll love this skillet!

QUESTION: SCRATCH RESISTANT OR SCRATCH PROOF OR EASY TO SCRATCH?
I have had this pan for 4 years. It has only a few very slight interior scratches, but I am careful with utensils and storage. The exterior is very scratched. I only use it once a week but it still maintains its non stick quality. However, I do not cook eggs in this so I cannot attest to its ability to perform at this function. I will buy it again when it needs to be replaced.
This is considered "scratch resistant" by the manufacturer and claims you can use metal utensils with it, but I haven't. It is in excellent condition inside and out to date. I love this pan.
The manufacturer claims that this pan is "scratch resistant", but quite frankly, I don't want to find out. I use wooden or plastic utensils only, wash with a soft cloth or sponge and store carefully. They are not immune to operator error - I had to replace my 8" recently because I forgot to turn off the burner after emptying the pan. But my 2-year-old 10" and 12" are as pristine on the cooking surface as the new one. I've never owned a better non-stick pan.
I am unaware of any coating that cannot be scratched. I would say the T-fal pro is highly scratch resistant.
I would say scratch resistant - I do not use metal cooking tools so I have no scratches, and with the fact nothing sticks I wipe clean and pan looks new.

They're pretty clear on not using metal on the cooking surface, but it seem to be resistant to scratching in general.

QUESTION: IS THE 10.25 THE DIAMETER OF THE BOTTOM OR THE TOP OPENING?
The description says the 10.25 inch has an 8 inch cook surface, and the 8 inch has a 6 inch cook surface.
10.25 is the bottom diameter, the top is 12.
I just measured, our T-fal is 12" at the top and 9" at the bottom. Hope that helps.
I have the 12.5 pan. It is 12.5 at the top. My guess is that the 10.25 one is 10.25 at the top.
The bottom measures 10 inches and the top 11.75 inches.
To clarify, the 8" pan is 8" across the top etc.

Cook's Illustrated Magazine just did recommendations on the lids for this T-fal skillet. They highly recommended the Paderno World Cuisine Stainless Steel 12.5 Inch Lid, but it's pretty pricey. Their second recommendation is the Norpro Stainless Steel Universal Pan Cover for half the cost. They did have one reservation about this lid and said, "Its wide, flat rim rested reliably on the pan's edge, although it left a few tiny gaps and also loosely fit our favorite 12-inch pans. Its plastic handle grew too hot to touch." I am ordering this one to try. Needed the lid the other night and foil just didn't do the job.
This pan doesn't come with a lid, and that's one reason, aside from the depth (about 2 inches), that I would call this a saute pan rather than a fryer. By that I mean that it won't accommodate a deep layer of oil. However, I have a lid from either a large stockpot or a large fryer that I use with this pan on occasion.
No. We use lids from our other pots to cover these pans. T-Fal may have lids available. These pans are the best non stick pans I have ever had. Better than the regular T-Fal pans.
After buying several lids for this pan, I found the Nordic Wear restaurant 12" brush stainless steel lid to have the best fit. It's somewhat flimsy but costs under $20 at Amazon. The type of cooking I do in the pan doesn't require use of a lid for very long.

No, I had to return it. I have a Bosch induction cooktop.
It is NOT compatible with the Samsung induction cooktop.
It does not work well at all with my Electrolux induction cooktop. I suspect that is has something to do with the convex center. Definitely a disappointment, especially as I did not get it at the current low price. Wish I had returned it. I replaced it with an All Clad non-stick pan.
I have a Samsung NE58H9970WS (Slide In Induction range) and it does not work on my cooktop. Very disappointed!
According to the instructions that come with this pan, it is not suitable for induction elements.

As far as I can see and reading info that came with the pan say stainless steel but on bottom is brushed so it shines.The lip of the pan also very brushed and shiny.Hope that helps.

I would contact T-fal. I've had my pan about that long and have never had to use more than a paper towel and a bit of soap and water. I can tell you that heating any non-stick kileete at high heat or empty on med-high to high heat will ruin the non-stick surface and is actually dangerous to use afterward because it may release chemicals.
I'm very disappointed with my 10" Pro. I used it lightly for less than 2 months and, even though I never used it without a bit of oil and had pretreated it according to T-fal's instructions, food began to stick. Try calling T-fal.
I have never had the problem. Could the nylon scrub pad have had any abrasive of some type in it? Have you tried wiping the skillet out with a paper towel dipped in oil then wiping it out? If that doesn't help I would call T-fal. I would just wash it out with a soapy dishrag after that. Good luck!
Send T Fal the question. They will likely recommend cleaning more than once every two months!
I don't think it will ever be the same again. Try a light coat of cooking oil and if that doesn't work, you'll need a new pan. Don't use the nylon scrub pad any more.
Mine are holding up great. I would call T fal to see what they might suggest. A nylon scrub pad should not harm the pan at all. Good luck

QUESTION: CAN I USE IT ON A GLASS COOK TOP?
I have a glass top stove and according to the booklet that I got with my pan, you can use it. All I can suggest is to be careful not to slide the pan across the cooktop.So far I am impressed with the pan.

I believe the pan is all aluminum coated with PTFE non-stick coating. From T-Fal's own website: What is T-fal non-stick made of and how safe is it? All non-stick coating contains PTFE which is the abbreviated name for a remarkable polymer called polytetrafluoroethylene. The non-stick coating is not attacked by acid or alkali bases and is very stable when heated to temperatures of up to 750 deg F. Since in a domestic kitchen the maximum temperature possible with a pan is about 570 degrees F, there is no risk should a pan be accidentally overheated. Health authorities in France, Europe, United States and other countries have approved non-stick PTFE coatings for use on cookware because it is an inert substance which does not enter into chemical reactions with food, water or household cleaners. If ingested it is totally innocuous in the body. In fact, non-stick PTFE is so safe it is used by the medical profession for coating heart stimulators, coating small pipes used as replacement arteries and has even been injected into patients with serious kidney conditions.

The one I purchased did not include a glass lid as it was the smallest size, but it would be nice to have for frying eggs sunny side up.

I've never tried it but I use very little oil and have absolutely no problems. It could depend on what you are frying and at what temp but I would think you could. Hopefully someone else will have a definitive answer.
I do not know for certain other than to say the food will not stick to the pan initially, thus allowing you to cook oil free, but since oil facilitates heat transfer chances are the life of the cooking surface will be shorter as food resins build up on the pan. Hope this helps.
The T-fal pan I bought won't even hold the oil in the center of the pan, I haven't used it without any oil because I want that for other aspects of my recipes but I think it would be fine without any. H
I usually use a minimal amount of oil but with the non-stick surface you don;t really need any. I've used these pans for several years. The non-stick surface lasts longer than any others I've had.
The T- fal pan does an excellent job frying without the use of oil. I use butter which on the T-fal pan and the comes out great! Hope this helps. You will not be dissapointed.
Very possible with this pan. When I got it, I actually cooked myself up 2 eggs over easy and with ZERO butter/grease they just slide around like it was greased. LOVE THIS PAN!

My 8" pan was not even close to flat. The center was at least 1/8" higher than the edges. The pan is also smaller than other 8" pans. It is smaller than 8" at the top and only has a 6" cooking surface. I threw it in the trash.
Yes, the pan is flat inside. That large, flat area is excellent for making crepes. And if you want to sautee', the oils and flavorings won't slide out to the edge and leave the middle empty.

I have not had any issue with burning. But as with any non-stick pan, it doesn't need to be on an extremely high flame or temp. It cooks fast without burning.
Not that I know of, I use these pans daily & don't have a problem. As a matter of fact I burned some chicken last night because I walked away from the stove & had no weird smells. These pans were also TOP PICK by COOK'S COUNTRY a few years in a row. The red ring in the middle is an indicator that the pan is hot & ready to use when the "red" circle becomes a solid red. Also I might suggest using a lower heat or switching to a WOK if you want to cook at high temps. Good Luck
I use this pan daily and I have not had a problem with the pan burning, even at med-high heat. However, of course it is best to use non-metal utensils to increase the longevity of the pan as scratches will ruin the non-stick surface.
If you mean does the pan warp, the answer is no. So far the cooking surface is showing no signs of wear. Just don't cook with the burner on high - that's hard on any pan. It fries quite well on medium heat. I heat the pan first on med. high and when the red dot in the center becomes solid red - then you know the pan is ready. Turn down the heat and fry.
